Sausage, Peppers and Onions

Description

This savory sausage dish is not only healthy but very flavorful… sure to please the entire family!

Ingredients

  • 4 turkey mild italian sausage links
  • 2 T olive oil
  • 1 green bell pepper, sliced into 23 inch long strips
  • 1 red bell pepper, sliced into 23 inch long strips
  • 1 yellow or orange bell pepper, sliced into 23 long strips
  • 1 T minced garlic
  • 1 large red onion, sliced
  • 115 oz can diced tomatoes
  • 1 T dried oregano
  • 1/2 c dry red wine
  • 1/2 t red pepper flakes
  • Sea salt, to taste

Instructions

  1. Cut sausage into 4 pieces
  2. In large pan heat olive oil over medium heat
  3. Add sausage and brown, when done remove from pan
  4. Increase heat and add onions and peppers, pan sear until blackened
  5. Once searing occurs add garlic and salt to taste and cook for 1 minute
  6. Add red wine, scraping bottom of pan to loosen “flavor” from pan
  7. Add tomatoes, oregano and red pepper flakes
  8. Return sausage to pan, bring to simmer for about 20 minutes
