This paleo egg salad tastes just like the traditional. Perfect to keep on hand for a quick and easy lunch!
- 12 dozen hard boiled eggs
- 1 c paleo mayo
- 1 T mustard
- 1/2 red onion, diced
- 1/2 c diced cucumber
- 4 pieces chopped cooked turkey bacon
- Sea salt and black pepper to taste
- Add chopped eggs, cucumber, onion, mayo, mustard, bacon, sea salt and pepper to a large bowl. Fold and combine well. Cover and chill for 2 hours. Serve with cucumber slices or lettuce leaves.
