Vegetable Medley

Description

This classic vegetable medley of squash, zucchini, pepper, onion, and mushrooms is a versatile side that is sure to bring flavor to any meal!


Scale

Ingredients

  • 23 zucchini
  • 23 yellow squash
  • 1 red pepper
  • 1 red onion
  • 1 package whole mushrooms
  • 1 garlic clove, minced
  • 12 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon rosemary leaves
  • 1 teaspoon sea salt

Instructions

  1. Preheat oven to 450°F
  2. Cut zucchini and squash lengthwise into fourths and then slice into bite size pieces
  3. Cut pepper into 1 inch pieces
  4. Cut onion into wedges
  5. Mix all of cut vegetables and garlic in a large bowl
  6. Add olive oil and balsamic vinegar and toss until vegetables are covered
  7. Add rosemary leaves and salt and toss again
  8. Roast vegetables for about 30 minutes or until outside edges are brown and inside is tender
