Spaghetti {Squash} and Meatballs

Description

This recipe gives you all of the flavor of a delicious pasta dish without the grains!

Ingredients

  • 1 spaghetti squash
  • 1.5 lbs ground beef or turkey
  • 1 t garlic powder
  • 1/2 t salt
  • 1 t oregano
  • 1 t basil
  • 2 eggs
  • 1/2 c pinenuts, ground or finely chopped
  • 1 large onion, finely chopped
  • 4 cloves of garlic, minced
  • 1 T olive oil
  • 1 tomato, chopped
  • 1 can or jar tomato sauce
  • 1 T Italian seasoning
  • fresh parsley for garnish

Instructions

  1. Preheat oven to 350F.
  2. Cut the spaghetti squash in half lengthwise, and place face down on a baking sheet lined with parchment paper.
  3. Put in oven and set timer for 40 minutes.
  4. Place ground beef, garlic powder, salt, oregano, basil, eggs, half of the chopped onion, and pinenuts in a large bowl, .
  5. Knead ingredients together until well mixed.
  6. Roll meat into golf ball sized portions.
  7. Add meatballs to oven and bake for 30 minutes.
  8. While squash and meatballs are cooking, heat olive oil in a large skillet or sauce pot over medium heat.
  9. Add chopped onion and stir until slightly browned, about 5 minutes.
  10. Add garlic and fresh tomatoes and stir for one minute more.
  11. Add tomato sauce and seasoning and bring to a boil. Reduce heat, and simmer on low until squash and meatballs are ready, about 20 minutes.
  12. Remove squash from oven and spoon out the seeds.
  13. Using a fork, scrape out the spaghetti-looking flesh out of each squash half and transfer to a bowl.
  14. Put a few spoonfuls of “spaghetti” onto plates and top with meatballs and sauce.
  15. Serve and enjoy!
