Italian Wedding Soup

Description

This delicious Italian Wedding Soup is great all year round. Be careful with the meatballs since they don’t contain breadcrumbs, they will be a little more fragile.


Scale

Ingredients

Soup:

  • 1.5 qt Organic Chicken Broth
  • 1 c Spinach, chopped
  • 1 t Onion Powder
  • 1 T Chopped Parsley
  • 1 t Sea Salt
  • 1/2 t Pepper
  • 1/2 t Garlic Powder

Meatballs:

  • 1 Egg
  • 1/2 c Pecorino Romano (sheep cheese)
  • 1 Small Onion
  • 1 t Sea Salt
  • 1/2 t Pepper
  • 1 t Garlic Powder
  • 2 lbs Ground Turkey or Beef
  • 2 T Coconut Oil

Instructions

  1. In a bowl, combine all meatball ingredients.
  2. Shape into 1 inch balls.
  3. Fry in coconut oil until done and set aside.
  4. Mix other ingredients in a saucepan and bring to a boil.
  5. When spinach is wilted, add the meatballs back in.
  6. Garnish with grated raw organic cheese if desired and serve.
