Baked Chicken with Tomatoes and Sweet Potatoes

Description

A delicious dish with classic ingredients that will make your family happy and full while still being healthy.

Ingredients

  • 1 Tablespoon lemon juice
  • 1/2 teaspoon oregano
  • 1/2 teaspoon pepper
  • 1/4 teaspoon sea salt
  • 1 1/4 pounds unpeeled sweet potatoes, cut into 3/4” chunks
  • 1 pound plum tomatoes, cut into 1/2” chunks
  • 4 boneless, skinless chicken breast halves
  • 2 ounces Dr. Brown approved cheese

Instructions

  1. Preheat the oven to 400°F. Spray 9”X13” baking dish with nonstick cooking spray. In a small bowl, mix lemon juice, oregano, pepper, salt and 2 Tablespoons water. Arrange sweet potatoes and tomatoes in baking dish. Drizzle evenly with half lemon juice mixture.
  2. Place chicken on top of vegetables and drizzle with remaining lemon juice mixture. Cover with foil and bake 45 minutes, occasionally spooning pan juices over chicken and vegetables.
  3. Uncover and bake 15 to 20 minutes, or until chicken is cooked thoroughly and vegetables are tender.
  4. Crumble goat cheese evenly over top of chicken and vegetables and bake 3-4 minutes longer, or until cheese is melted.
