Baked Cheesy Zucchini Fries

Description

These zucchini fries make an excellent healthy and tasty substitute for french fries!

Ingredients

  • ½ c almond meal
  • ½ c fine grated Romano cheese
  • 1 t. garlic powder
  • 1 t Italian seasoning mix
  • ½ t. black pepper
  • 4 medium zucchinis
  • 1/2 cup coconut milk
  • (This recipe does not need salt because of the Romano cheese.)

Instructions

  1. Preheat oven to 425F
  2. Wash zucchini and cut into large julienne pieces. I use my mandolin to achieve this.
  3. Allow cut Zucchini to sit on paper towels while you continue prep. This allows some of the water content to leave the zucchini for a crisper “fry.”
  4. Mix almond meal, Romano cheese, garlic powder, Italian seasoning and pepper.
  5. Dip zucchini in coconut milk and then place in large zip lock bag with almond, cheese mixture.
  6. Shake vigorously.
  7. Remove zucchini and place on cookie sheet lined with parchment paper.
  8. Place in preheated oven for 15-20 minutes, flipping halfway through baketime. Serve with Paleo Ranch if desired.
