Almond “Breaded” Salmon

Description

The dredge for this dish is free of all grains yet still makes for a delicious breaded salmon dish!

Ingredients

  • 1 1/2 lb salmon filet (de-boned, skinned), cut into 4 – 5 servings
  • 3/4 c course ground almond meal
  • 3 t paprika
  • 1/2 t cayenne
  • 1 t salt
  • 1/2 t pepper
  • 1 egg

Instructions

  1. Preheat oven to 425°F.
  2. Mix together the almond meal, paprika, cayenne, salt and pepper into a shallow dish and set aside.
  3. Beat one egg.
  4. Dip salmon in egg wash and then into almond mixture.
  5. Place parchment paper on cookie sheet and place “breaded” salmon on top of parchment paper.
  6. Place in preheated oven for 17-20 minutes.
  7. The almond mixture will begin to brown. Once browned remove from oven and serve with honey mustard or your favorite dipping sauce.
