Almond “Breaded” Salmon

The dredge for this dish is free of all grains yet still makes for a delicious breaded salmon dish!

Ingredients
- 1 1/2 lb salmon filet (de-boned, skinned), cut into 4 – 5 servings
- 3/4 c course ground almond meal
- 3 t paprika
- 1/2 t cayenne
- 1 t salt
- 1/2 t pepper
- 1 egg
Instructions
- Preheat oven to 425°F.
- Mix together the almond meal, paprika, cayenne, salt and pepper into a shallow dish and set aside.
- Beat one egg.
- Dip salmon in egg wash and then into almond mixture.
- Place parchment paper on cookie sheet and place “breaded” salmon on top of parchment paper.
- Place in preheated oven for 17-20 minutes.
- The almond mixture will begin to brown. Once browned remove from oven and serve with honey mustard or your favorite dipping sauce.
