So this weekend MarpĂ© had the privilege of spending some time with our new friends over at Frisco Farm Stop! Micah and I spent the afternoon talking with customers about the Dr. Brown {paleo} Diet and sampling a brand new recipe from our very own, Chef Celia. This week we gave her the challenge of coming up with a recipe that was not only Dr. Brown approved but also used only ingredients that are available at the Farm Stop from the awesome vendors over there. Here’s what she came up with {and it was pretty darn good if we do say so ourselves!}

Ingredients:

  • ÂĽ c Nate’s Raw Harvest sprouted pecan butter {Nate is awesome, and his nut products are amazing! Seriously…the best.}
  • 1 c Nate’s Raw Harvest pre-soaked walnuts
  • 3 T pasture butter
  • 1 egg white
  • 2 T raw local honey

Instructions:

Step 1: Preheat oven to 350F.

Step 2: Using a food processor, grind walnuts into a coarse flour-like consistency, making sure not to over process it and turn it into butter.

Step 3: Add pecan butter, pasture butter, honey, and walnut meal to a medium mixing bowl, and blend until ingredients are evenly mixed.

Step 4: In a large mixing bowl, beat the egg white until a stiff peak forms.

Step 5: Fold egg white into batter.

Step 6: Using a ½ tablespoon, spoon batter about 2 inches apart onto a cookie sheet pre-lined with parchment paper.

Step 7: Bake for 10 minutes or until edges are a golden brown.

As you can see it was a pretty simple process, and the result was actually quite impressive. The customers agreed that it was hard to believe that a cookie made with only 5 REAL food ingredients could taste THIS good!! Go ahead and try it for yourself. I don’t think you will be disappointed!
