Pecan Butter Wafer Cookies

Description

This delicious real food paleo cookie only has 5 ingredients in it including sprouted pecan butter, soaked walnuts, pasture butter, raw honey, and egg. It’s super simple to make as well making it the perfect snack to fix that sweet tooth! Makes 24-30 cookies.

Ingredients

  • 1/4 c Nate’s Raw Harvest sprouted pecan butter
  • 1 c Nate’s Raw Harvest pre-soaked walnuts
  • 3 T pasture butter
  • 1 egg white
  • 2 T raw local honey

Instructions

  1. Preheat oven to 350F.
  2. Using a food processor, grind walnuts into a coarse flour-like consistency, making sure not to over process it and turn it into butter.
  3. Add pecan butter, pasture butter, honey, and walnut meal to a medium mixing bowl, and blend until ingredients are evenly mixed.
  4. In a large mixing bowl, beat the egg white until a stiff peak forms.
  5. Fold egg white into batter.
  6. Using a 1/2 tablespoon, spoon batter about 2 inches apart onto a cookie sheet pre-lined with parchment paper.
  7. Bake for 10 minutes or until edges are a golden brown.
