This week we are featuring a simple yet delicious dessert that can be made with ingredients most people have on hand! These Baked Apple Cups are so yummy and perfect to satisfy the inevitable and dreaded sweet tooth. Try them out for yourself, and let us know what you think!
Ingredients:
  • 2 Fiji or Honeycrisp apples
  • 1 T pasture butter
  • 1½ t cinnamon
  • 3 T organic raw honey, local if available
  • â…“ cup chopped walnuts
  • 2 T coconut milk, optional

Step 1: Preheat oven to 350F, and melt butter in small skillet on medium-high heat.
Step 2: Wash and halve apples, and se a 1 inch melon ball scooper to remove seeding and create a small cup/ bowl.

Step 3: Use about a teaspoon of cinnamon and sprinkle each apple half evenly.

Step 4: Place cup side down into the skillet with melted butter, and heat 3-5 minutes until apples become fragrant.

Step 5: Remove from skillet and place on a foil lined pan, cup side up. Fill each half with walnuts, and drizzle with honey.

Step 6: Cover with foil and bake 30 minutes or until apples are tender.
Step 7:While apples are baking, mix remaining cinnamon (about ½ t) with coconut milk.

Step 8: Remove apples from oven, and plate them. Drizzle with honey and cinnamon coconut milk.
