With Fall just around the corner, we are trying out some delicious spiced recipes that are sure to get you in the spirit. This one, in particular, struck a chord with our entire crew. Creamy butternut squash, melted butter, pure maple syrup, cinnamon and nutmeg blend together to create the perfect taste of Autumn we’ve all been anticipating. Tasty enough to be a dessert but healthy enough to pass as a side dish … it is sure to please the whole family!

Ingredients:
  • 4 c diced butternut squash
  • ¼ c melted butter
  • 2 T maple syrup
  • ½ t cinnamon
  • 1 t nutmeg
  • ½ t sea salt

Instructions:
Preheat oven to 400F.
In a small sauce pan heat butter to melt over low heat.

Whisk in cinnamon, nutmeg and salt.

Pour butter mixture over squash and toss to cover evenly.

Drizzle with syrup and toss again.

Place baking dish in oven and cook for 40 minutes. Remove and serve.
