Description
This spring veggie medley combines radishes, Brussel sprouts, snap peas, and lime for a unique, healthy, and delicious side dish.

Ingredients
- 2 small bundles red radish
- 1 1/2 c Brussels sprouts
- 1 cup snap peas
- 1 lime juiced and seated
- 1 T olive oil
- Salt to taste
Instructions
- Preheat oven to 400F.
- Wash and trim radishes, sprouts and peas.
- Place on baking sheet and drizzle with olive oil, lime juice and zest, and salt.
- Place in preheated oven for 35-40 minutes until radishes are fork tender.
- Remove and serve hot.
