Description

This spring veggie medley combines radishes, Brussel sprouts, snap peas, and lime for a unique, healthy, and delicious side dish.

Ingredients

  • 2 small bundles red radish
  • 1 1/2 c Brussels sprouts
  • 1 cup snap peas
  • 1 lime juiced and seated
  • 1 T olive oil
  • Salt to taste

Instructions

  1. Preheat oven to 400F.
  2. Wash and trim radishes, sprouts and peas.
  3. Place on baking sheet and drizzle with olive oil, lime juice and zest, and salt.
  4. Place in preheated oven for 35-40 minutes until radishes are fork tender.
  5. Remove and serve hot.
