Thai Coconut Lime Chicken

Description

Zesty lime chicken topped with coconut flakes that add a nice crunch and flavor.


Scale

Ingredients

  • 4 boneless, skinless chicken breast
  • 2 garlic cloves, minced
  • 1/4 tsp paprika
  • 1/4 tsp chili powder
  • zest of 2 limes
  • 2 cups chicken broth
  • 1 (14oz) can coconut milk
  • ¼ cup fresh cilantro leaves
  • 1 teaspoon sea salt
  • juice of 2 limes
  • ½ cup coconut flakes

Instructions

  1. Heat oven to 325°F. Lightly coat a 9”x 13” baking dish with olive oil spray. Arrange the chicken in the pan.
  2. Sprinkle the chicken breasts with the garlic, paprika, chili powder, lime zest; set aside. Combine the chicken broth, coconut milk, cilantro, sea salt and lime juice and
  3. pour over the chicken.
  4. Cover and bake 30 minutes or until thoroughly cooked. Remove lid and sprinkle chicken with coconut flakes and cook 5 minutes or until coconut is browned.
