Ingredients
- 4 boneless, skinless chicken breast
- 2 garlic cloves, minced
- 1/4 tsp paprika
- 1/4 tsp chili powder
- zest of 2 limes
- 2 cups chicken broth
- 1 (14oz) can coconut milk
- ¼ cup fresh cilantro leaves
- 1 teaspoon sea salt
- juice of 2 limes
- ½ cup coconut flakes
Instructions
- Heat oven to 325°F. Lightly coat a 9”x 13” baking dish with olive oil spray. Arrange the chicken in the pan.
- Sprinkle the chicken breasts with the garlic, paprika, chili powder, lime zest; set aside. Combine the chicken broth, coconut milk, cilantro, sea salt and lime juice and
- pour over the chicken.
- Cover and bake 30 minutes or until thoroughly cooked. Remove lid and sprinkle chicken with coconut flakes and cook 5 minutes or until coconut is browned.
