Slow Cooker Sausage Stew

Description

This hearty stew is loaded with veggies and packed with flavor. The sausage makes for a tasty and satisfying cold weather meal!

Ingredients

  • 2 lb beef Kiebalsa sausage, sliced
  • sea salt, to taste
  • freshly ground pepper, to taste
  • paprika, to taste
  • 2 Tbs. olive oil
  • chopped garlic, to taste
  • 1 medium onion, finely chopped
  • 1 package sliced mushroom
  • 1 package frozen peas
  • 1 lg sweet potato, cubed
  • 2 cups baby carrots, sliced
  • 32 oz beef broth
  • 1 1/2 T fresh thyme, finely chopped
  • 2 bay leaves
  • 1 pkg brussel sprouts, optional
  • 1 pkg frozen chopped spinach

Instructions

  1. Heat oil in large skillet on medium-high heat.
  2. Add garlic and onion to skillet, and cook until softened, about 2-3 minutes.
  3. Add sausage, mushrooms, and spinach to pan.
  4. Cook until sausage is browned, about 4-5 minutes.
  5. Remove from heat and pour contents of skillet into crockpot.
  6. Add remaining ingredients.
  7. Heat on low for 8 hours.
