Saucy Meatballs over Cauliflower Mash

Description

This recipe is a complete paleo meal with hearty meatballs, a savory sauce, and creamy cauliflower mashers.

Ingredients

  • 1 1/2 grass-fed ground beef
  • 1 white onion, diced small
  • 1 T dried parsley flakes
  • Sea salt and pepper, to taste
  • 1 large egg
  • 1 16 oz bag frozen cauliflower
  • 1 cup beef stock
  • 2 T course ground mustard
  • 2 T paleo ketchup
  • 3 T Worcestershire sauce
  • 1/4 c almond meal
  • 4 T pasture butter
  • 2 T pure maple syrup

Instructions

  1. Preheat oven to 350F.
  2. In a large bowl, mix ground beef, diced onion, salt, pepper, egg, mustard, ketchup, dried parsley, almond meal and 1 T Worchester and mix well.
  3. Roll into 1.5 inch balls and place on baking sheet.
  4. Bake in oven for 25 minutes.
  5. While meatballs are cooking, steam cauliflower till soft.
  6. Blend smooth with 2T butter.
  7. In a small sauce pan heat beef stock, maple syrup and 2 T Worchester on medium heat, and allow to simmer 10 minutes.
  8. When meat balls are done place in sauce.
  9. Place cauliflower mash equally in bowls and top with meatballs and sauce.
