Paleo Cheesy Sloppy Joes

Description

This paleo inspired version of an All-American classic quickly became a family favorite at our house. Traditional sloppy joe served on cheese crisps instead of bread? Yes, please.


Scale

Ingredients

  • 1 1/2 pounds ground beef
  • 1 green bell pepper, seeds removed, small diced
  • 1 red bell pepper, seeds removed, small diced
  • 1 small yellow onion, small dice
  • 1 t garlic powder
  • 1/2 c Dr. Brown approved ketchup or homemade
  • 1 T red wine vinegar
  • 1 T wheat-free Worcestershire sauce
  • 2 c diced tomatoes
  • Sea salt and black pepper to taste

Cheese Bread:

  • 8 thin 3-4″ slices of Dr. Brown approved sheep or goat cheese (Manchego or Romano work well)

Instructions

  1. In a skillet brown ground beef with peppers and onions over
  2. Medium heat.
  3. Add sea salt, pepper, garlic powder. Stir and mix well.
  4. Add ketchup and stir. Next add red wine vinegar and diced tomatoes. Stir well and reduce heat to low.
  5. Cover and cook 20 minutes.
  6. In a skillet brown ground beef with peppers and onions over
  7. Medium heat.
  8. Add sea salt, pepper, garlic powder. Stir and mix well.
  9. Add ketchup and stir. Next add red wine vinegar and diced tomatoes. Stir well and reduce heat to low.
  10. Cover and cook 20 minutes.
  11. While cooking, make cheese “bread” (recipe below.)
  12. Remove meat mixture from heat.
  13. Spoon a serving size on top of a cheese slice and top with another cheese slice.
  14. Repeat with remaining cheese slices and serve!

Cheese Bread:

  1. Preheat oven to 450F.
  2. Place parchment paper on baking sheet with a thin 3-4″ slice of manchego, Romano or other Dr. Brown approved sheep or goat cheese of your choice.
  3. Cook for 7-10 minutes or until browned. Remove and allow to cool.
  4. (Time will depend on thickness of cheese)
