Paiche Taco Wraps

Description

This recipe is different and rich in flavor. Paiche is a mild white fish that absorbs the citrus notes and is balanced with the steamed collard greens.

Ingredients

  • 1 1/2 lbs Paiche deboned-deskinned
  • 8 large collard green leaves
  • 1 large red bell pepper diced
  • 1 large yellow bell pepper diced
  • 1 lemon juiced
  • 1 large navel orange juiced
  • 1/2 red onion, diced
  • sea salt and pepper to taste

Instructions

  1. Cut paiche into 1 inch pieces.
  2. In a gallon ziplock bag mix fish with diced bell peppers, lemon juice, orange, red onion, sea salt and pepper to taste.
  3. You can allow to sit up to 24 hours.
  4. When ready to cook, pre heat oven to 400f.
  5. Pour fish mixture onto a baking sheet and cook for 20 minutes.
  6. Wash collard green and remove stem up to leaf.
  7. Place in a steam basket and steam 30 seconds.
  8. Remove fish and spoon into steamed collard green leaves.
  9. Serve hot.
