Balsamic Roasted Baby Carrots

Description

Easy to make and complex in flavor, this side dish will go with almost anything.


Scale

Ingredients

  • 1 pound baby carrots, tops removed, peeled, and cleaned
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Dash of sea salt and cracked pepper
  • Dried or fresh parsley for garnish

Instructions

  1. Preheat oven to 400 degrees
  2. Wash and peel carrots, pat dry
  3. Mix olive oil and balsamic vinegar
  4. Place carrots on baking sheet lined with parchment paper
  5. Brush carrots with balsamic mixture
  6. Dust with parsley, salt and pepper
  7. Bake for 15 minutes
  8. Remove and brush with balsamic mixture
  9. Place back in oven and cook for additional 10-15 minutes depending on size of carrots
  10. Remove and serve
