Description

This wonderful eggs florentine casserole makes an excellent side dish or breakfast dish, and is an excellent nutritious way to start your day!

Ingredients

  • 10-oz Package Frozen Chopped Spinach
  • 1 c (4 oz) shredded Raw Organic Cheddar Cheese
  • 2 c Sliced Fresh Mushrooms
  • 6 Green Onions (about a cup), Chopped
  • 2 T Butter, Melted
  • 12 Large Eggs, lightly Beaten
  • 1 c Coconut Milk
  • 1 c Dr. Brown approved cheese, shredded
  • 1/4 t Paprika

Instructions

  1. Sprinkle 3/4 cup cheddar cheese in bottom medium-sized baking dish.
  2. Saute mushrooms, spinach and green onions in butter until tender and wilted; spread over cheese.
  3. Combine eggs and coconut milk using a hand mixer until fluffy (about 2 minutes). Pour egg mixture over vegetable mixture. Top with remaining cheddar cheese and sprinkle with paprika .
  4. Bake uncovered at 350 for 40 minutes or until set.
