Chicken with Winter Squash

Description

A colorful chicken dish that is easy to make and will please the entire family.

Ingredients

  • 1 tomato
  • 1/2 onion
  • 3 garlic cloves
  • 2 tsp paprika
  • 1 tsp thyme, crumbled and divided
  • ¾ tsp sea salt, divided
  • 1 pound each skinless chicken drumsticks and skinless thighs
  • olive oil cooking spray
  • 4 cups peeled, diced butternut winter squash (about 2 medium)
  • 1 cup organic apple juice
  • 4 garlic cloves, minced
  • 1/8 tsp pepper, or to taste

Instructions

  1. Preheat oven to 400°F.
  2. Combine tomato, half onion, and garlic and process to make tomato sauce
  3. In a small bowl, stir together tomato paste, paprika, ½ teaspoon of thyme, and ½ teaspoon of sea salt. Spray baking tray with cooking spray. Rub chicken with tomato paste mixture and set aside.
  4. In a 9” x 13” baking pan, stir together squash, apple juice, garlic, pepper and remaining ½ teaspoon thyme and ¼ teaspoon sea salt. Place chicken pieces on top of squash.
  5. Cover and bake for 30 minutes. Then remove cover and continue baking for an additional 20 minutes.
  6. Transfer to a serving platter arranging cooked chicken pieces on top of squash.
