Baked Sweet Potatoes

Description

Baked sweet potatoes make a wonderful side dish and are a much healthier alternative to traditional baked potatoes.


Scale

Ingredients

  • 4 small sweet potatoes
  • 4 T pasture butter
  • cinnamon to taste, optional
  • aluminum foil square

Instructions

  1. Preheat oven to 400F.
  2. Wash potatoes and use a fork to poke holes all over them.
  3. Roll potatoes in 2 T of melted butter.
  4. Wrap potatoes individually in aluminum foil.
  5. Place all four sweet potatoes on a baking sheet.
  6. Bake for 45 min-1 hr or until potatoes feel soft to the touch.
  7. Let cool 5 mins and then top each sweet potato with butter and cinnamon to taste.
