I’m just going to be real and say that fish is not usually my (or my kids’) preferred choice of protein. But this unique recipe may have just changed our mind. The whole family agrees that it is SO good!! Celia has recently discovered the versatility of hazelnut meal, and in this dish, ground hazelnuts and pecans create a delicious bread-less crust that will have you begging for seconds!

Ingredients:

  • 4 (6 oz) trout fillets
  • 1 c ground pecans
  • ¼ c hazelnut meal
  • ¼ c minced parsley
  • 1 T extra virgin olive oil
  • sea salt and pepper to taste

Instructions:

Step 1:  Preheat oven to 350F.

Step 2. Place trout on a baking dish, salt and pepper to taste, and brush with olive oil.

Step 5: In a small bowl, mix pecans, hazelnut meal, and minced parsley, and coat fish with nut mixture.

Step 6: Bake in oven for 20-25 minutes, and serve!
