I love finding new recipes that make for great party appetizers. These mini eggplant pizzas are just that. They taste great, look beautiful on a platter, and make a fabulous finger food. Unfortunately, my kiddos couldn’t get past the texture difference between an eggplant and normal pizza crust, but all the adults fell in love! Um, healthy pizza? Yes, please.
Ingredients:
  • 2 large eggplant
  • 1 (4 oz) pkg uncured turkey pepperoni
  • sea salt to taste
  • 1 T olive oil
  • 6 oz shredded goat or sheep cheese
  • 1 c Dr. Brown approved marinara sauce

Instructions:
Step 1: Preheat oven to 375F, and wash eggplant.

Step 2: Slice eggplant.

Step 3: Place slices on paper towel on baking pan, salt to taste, and allow to rest 30 minutes.

Step 4: Pat dry with paper towel and brush with olive oil.

Step 5: Bake for 25 minutes until browned.

Step 6: Top each slice with marinara sauce and smooth evenly.

Step 7:Add cheese and pepperonis.

Step 8: Broil in oven for 5-7 minutes until all cheese is melted and lightly browned.

Step 9: Serve and enjoy!
