This week’s feature recipe is absolutely delicious! Celia stumbled upon it last week when she needed an easy recipe with simple ingredients for a last minute meal for my family. She had no idea it would be such a hit! It was so good that my husband gave her several compliments on it the next day because he was STILL thinking about it. Since then she has literally made it three times for different groups of people, and it has been two thumbs up across the board! Needless to say, this is one to add to the regular menu for sure. Check it out:

Ingredients:

  • 4 organic, free-range chicken breasts
  • 1½ c grated Manchego cheese
  • â…” c Dr. Brown approved pesto (we use a fresh pesto from Whole Foods)
  • 2 Roma tomatoes, sliced thin

Instructions:
Step 1: Preheat oven to 400F, and lay chicken breasts flat in baking dish.

Step 2: Coat top of chicken with pesto.

Step 3: Layer sliced tomatoes.

Step 4: Top with cheese.

Step 5: Bake at 400F for 35-40 minutes.
