I don’t think many people will argue with me when I say that tacos might just be the best food on the planet. If you are like me and my family, you may crave tacos multiple times in one week. That being said, Celia and I are always on the look-out for good Dr. Brown approved tortilla recipes, because let’s be real and admit that a lettuce shell just isn’t the same. So without further adieu, check out these carrot tortillas that just may be your new addiction.
Ingredients:
  • 1½ c baby carrots
  • ¾ c grated goat cheese
  • 2 eggs
  • 1 T almond meal
  • 1 T arrowroot powder
  • 1 T minced parsley or cilantro
  • Sea salt to taste

Instructions:
Step 1: Preheat oven to 375F, and in a food processor dice carrots to small bits.

Step 2: Add cheese, eggs, almond meal, arrowroot powder, minced parsley and salt, and blend again until all ingredients are well combined.

Step 3: Cover a baking sheet with parchment paper, and spoon ¼ cup carrot mixture down and flatten (tip: place parchment paper over top while flattening to help spread evenly).

Step 4: Place in oven for 15-20 minutes until lightly browned and cooked through.

Step 6:Remove from parchment paper and place over glass to allow to cool for 5 minutes.

Step 7: Repeat process until all batter is used and six tortillas are made.

Step 8: Add your favorite taco filling and toppings and enjoy.
