This week we are featuring something light and healthy to welcome Spring time! This salad, although simple to prepare, boasts several layers of flavor that will satisfy even those who are typically critical of leafy green dishes. The combination of the sweet blueberries with the creamy avocados and crumbly goat cheese is to die for, and the white balsamic blueberry vinaigrette tops it off perfectly! Try it out as a mid- afternoon snack and see for yourself!

Ingredients
  • 4 c spring mix
  • 6 oz blueberries
  • 1 avocado
  • ¼ c white balsamic vinegar
  • 3 T olive oil
  • sea salt to taste
  • ¼ c crumbled goat cheese or sheep feta

Blueberry SaladIngredients

Instructions:
Step 1:Wash and spin leaves, and divide leaves equally onto 4 plates.

Step 2:Wash and strain blueberries.

Step 3: Sprinkle half the blueberries onto the leaves on each plate. Reserve the other half.

Step 4: Slice and top each salad with ¼ of the avocado.

Step 5: In a food processor, add reserved blueberries, white balsamic vinegar, olive oil, and salt, and blend.

Step 6: Top each salad with cheese, and drizzle with blueberry balsamic dressing.

Step 7: Serve, and enjoy!
