I hope everyone has had an amazing holiday so far filled with family, food, and good times! This week we are featuring a delicious and super easy rib roast entrée to say goodbye to 2016 and celebrate the coming of the New Year with gourmet cuisine. This dish has great flavor and texture and is sure to impress your family or guests yet won’t keep you slaving away in the kitchen too long. In my opinion, that’s the perfect kind of dish!
Ingredients:
  • 3-4 lb rib roast
  • 5 cloves garlic cut in half
  • ¼c olive oil
  • Sea salt and pepper
  • 2 T fresh rosemary chopped
  • 2 T thyme chopped
  • ½ c beef stock

Instructions:
Preheat oven to 450F.
Place roast on rack in roasting pan, make small slices in roast and slip garlic in.

Rub roast with salt and pepper.

Add chopped rosemary and thyme to olive oil and mix in broth.

Coat/brush roast with mixture.

Pour an additional ½ c beef broth in bottom of roasting pan.

Add to oven for 25 minutes. Remove and brush roast with liquid in bottom of pan.
Reduce heat to 350F and cook to desired wellness. Another 50 minutes should give you about 120-130F for medium rare but will vary with size of roast.
