One of the main keys to eating healthy is having real food snacks on hand that are quick and easy to grab and go. This often requires a little planning and thinking ahead as most “real food” doesn’t come pre-made in easy packaging. With this deviled egg recipe, the prep work is worth every minute because the end result is not only convenient but totally DELISH with the turkey bacon bits adding the perfect crunch. My husband already asked for these to be a staple in our fridge in the new year!

Ingredients:
  • 6 eggs
  • 2 strips turkey bacon
  • ¼t white pepper
  • ¼t sea salt
  • 1T mustard (yellow or Dijon)
  • 3 T paleo jarred mayo or homemade
  • 1 T minced green onion or chives
  • Paprika optional

Instructions:
Preheat oven to 400F, and bring a pot of water to boil.
Add eggs to boiling water. Cook 15 minutes and run under cool water immediately.

While eggs are boiling, lay bacon in a single layer onto a baking pan and place in preheated oven. Cook till crispy (15-17 minutes). Remove and cool.

In a bowl, mix mustard, mayo, sea salt, and pepper.

Peel eggs.

Cut in half.

Remove yolk and add to mayo mixture. Blend well.

Add yolk mixture into ziplock bag and cut a small hole in one corner. Pipe mixture into egg white halves evenly.

Chop bacon and add to top of eggs along with minced chives.

Sprinkle with paprika if desired.

Serve or chill.
