Roasted Tomato, Onion, and Basil Soup

Description

What could be better than a cup of hot soup made from delicious roasted veggies like tomato, onion, and garlic?!


Scale

Ingredients

  • 8 tomatoes of choice
  • 1 c cherry tomatoes
  • 1 large sweet yellow onion, quartered
  • 2 T olive oil
  • 1 handful of fresh sliced basil
  • 5 cloves of garlic
  • sea salt and pepper to taste

Instructions

  1. Pre-heat oven to 400F.
  2. Wash tomatoes, slice in half, and add to baking pan.
  3. Quarter onion and add to baking dish as well as garlic cloves.
  4. Top with olive oil and stir to coat all pieces well.
  5. Cook for 30 minutes.
  6. Remove from oven and place in food processor or blender.
  7. Add salt and pepper and basil and blend until desired texture reached.
  8. Serve hot.
