Description
Butternut squash is such a hearty veggie that can make a great substitute for traditional starches in a meal.

Ingredients
- 1 medium butternut squash
- 3 T pasture butter
- cinnamon to taste (optional)
Instructions
- Preheat oven to 400F.
- Using a peeler, remove skin from outside of squash.
- Slice squash into chunks of equal size.
- Place chunks onto baking sheet in a single layer.
- Slice butter into several pieces and place on top the squash in several places so that butter melts evenly.
- Season squash with cinnamon if desired.
- Place baking sheet into preheated oven and cook for 20-25 minutes, stirring occasionally to spread the melted butter and avoid burning.
