Probably the snack that my husband and I most often “cheat” on is corn tortillas chips and salsa. It is absolutely our FAVORITE salty snack. So naturally when Celia suggested featuring one of her famous salsa recipes, I was immediately on-board but with one stipulation … that she came up with a paleo “tortilla chip” recipe as well! The two recipes she landed on are both seriously DELISH. The salsa has just enough kick with that fresh homemade taste that can’t be found in the store-bought jars. And the chips provide the crunch you crave and make for the perfect vehicle for getting the yummy salsa to your mouth! Another great thing about these chips is that they are more filling and less addicting than typical tortilla chips. You will fill up quicker, eat less, yet still feel absolutely satisfied! Check it out.

Salsa Ingredients:

  • 5 tomatillos
  • 1 jalapeno
  • a small handful of fresh cilantro
  • 2 c sweet grape tomato
  • 3 lg cloves garlic
  • 1 small red onion, rough chop
  • 1 cup water

Instructions:

  1. Wash all the vegetables.
  2. Boil 2 cups of water.
  3. Remove husk from tomatillos place in boiling water for 5 minutes.
  4. Place jalapeno, cilantro, grape tomatoes, garlic, chopped red onion, 1 cup water and tomatillos after they cook into blender.
  5. Blend on high until desired consistency.

Paleo Tortilla Chips Ingredients:

  • 2 c almond meal
  • 2 whipped egg whites
  • ½ t salt
  • ½ t garlic powder
  • ½ t cumin
  • ½ t paprika
  • sprinkle course sea salt, to taste

Instructions:

  1. Preheat oven to 350F.
  2. Combine dry ingredients except paprika and course sea salt.
  3. Seperate egg white and whip to soft peaks fold into almond flour mixture.
  4. Lay half the dough between 2 pieces of parchment paper and roll out as thin as you can.
  5. Remove top piece of parchment paper.
  6. Place on baking sheet and cut into triangles.
  7. Place in oven for 10 minutes or until golden brown.
  8. Repeat process for remaining dough.

  1. I almost gave up on feeding my family cod, but the recipe Cajun Cod is now in our recipe book. It was a bit too spicy for my daughter so I coated her fillet and then gave it a quick rinse before cooking it; this gave the fish a great flavoring that was just right for her.
