Veggies, while a crucial part of a healthy diet, get a bad rap for being boring and lacking flavor. But when prepared the right way, they can be quite the opposite. The crunch of hazelnuts and the sweet chewiness of raisins bring awesome texture and flavor to this unique green bean and carrot side dish.
Ingredients
  • 12 oz green beans
  • 2 c baby carrots (quartered)
  • ¼ c hazelnuts
  • ⅔ c water+1/2 c
  • Juice of 1 orange
  • 2 T raisins
  • Sea salt and pepper to taste
Instructions:
Step 1: Heat butter in a large skillet on medium-hight heat.
Step 2: When butter is melted, add carrots. Stir and allow to cook 2-3 minutes.

Step 3: Add water and allow to cook until water is gone.

Step 4: Add green beans and water. Cover and cook 3 minutes.

Step 5: Add juice of orange.

Step 6: Add hazelnuts and raisins, and cook an additional 3-5 minutes.

Step 7: Plate and serve!

Tip: While the flavor and appearance of this dish was spot on, it was somewhat difficult to get all the different ingredients on the fork at the same time. So we recommend cutting the green beans down into bite size pieces!
