For some reason, stuffed mushrooms just look fancy and impressive to me. I always feel like a real pro when I make them and serve them. You will be happy to know though that you absolutely don’t have to be a pro because they are actually quite simple to make. Impress your guests at your next get together by serving these Dr. Brown approved Chorizo Stuffed Mushrooms!
Ingredients:
- 1½ c turkey chorizo sausage
- 16 oz whole white button mushrooms
- ½ c crumbled goat cheese (I used tomato basil flavor)
- ¼ c Dr. Brown approved mayonnaise or homemade
- 1 T olive oil
- 1 t minced garlic
- 2 T diced green onions
Instructions:
Step 1: Preheat oven to 400F.
Step 2: In a skillet heat olive oil on medium heat.
Step 3: Add chorizo to skillet and cook until lightly browned and internal temperature is reached 165F.
Step 4: Wash mushrooms and remove stems.
Step 5: Chop mushrooms stems.
Step 6: Add chopped stems and garlic to skillet and cook an additional 1 minute. Remove from heat.
Step 7: In a mixing bowl, stir together mayo and goat cheese crumbles.
Step 8: Add cooked chorizo mixture to the mayo mixture and blend well to create the filling.
Step 9: Stuff mushrooms with 2 T filling and place on baking sheet.
Step 10: Place in oven for 15 minutes.
Step 11: Remove and top with crumbled goat cheese and diced green onions and serve.
