Since Celia is still on her Fall baking kick, she whipped up these amazing banana nut muffins the other day! They were a hit with the entire household. Take on-the-go as a healthy snack, or serve warm with a tab of butter at the breakfast table (my favorite.) You won’t even miss the wheat or refined sugar… I promise!

Ingredients:

  • 3 ripe bananas, mashed
  • 3 T honey
  • 2 t vanilla extract
  • 4 T melted pasture butter
  • ¼ c unsweetened applesauce
  • 4 large eggs
  • ½ c coconut flour
  • ½ c (50g) almond meal
  • ¾ t baking soda
  • ¼ c chopped pecans or walnuts (optional)
  • a handful of allergen-free chocolate chips (optional)
  • 1 T melted pasture butter or coconut oil

Instructions:

Step 1: Pre heat oven to 350F, and mix together mashed bananas, honey, vanilla, 4 T melted butter, and eggs.

Step 2: Blend well.

Step 3: In a small mixing bowl, blend dry ingredients, and add dry ingredients to wet ones, slowly mixing.

Step 4: Grease a muffin tin with melted butter or coconut oil, and ill cups ¾ way up with batter.

Step 5: Bake in oven for 15-20 minutes, and serve warm!
