As conscious as we are in my family about eating healthy, I am ashamed to admit that it is still a struggle even for me to get the recommended amount of vegetables in a day. It’s even harder for my kiddos, so that’s why recipes like this make me happy. Anytime you can make broccoli taste this good while also making it a super kid-friendly finger food is a big WIN in my book. My whole crew gave it two thumbs up. This one’s a keeper. Thanks Celia!
Ingredients:
- 4 cups whole broccoli raw reduces to 2 cups fine chop broccoli
- ½ c almond meal
- ½ c shredded goat or sheep cheese
- 1 egg
- 2 cloves minced garlic
- ¼ c diced green onion
- Sea salt to taste
Step 2: Sprinkle water with salt, add broccoli, boil for two minutes, remove, and strain.
Step 3: Place on cutting board and fine chop broccoli.
Step 4: Add broccoli to a medium mixing bowl, and mix in egg.
Step 5: Add cheese and stir.
Step 6: Add almond meal, garlic, green onion and salt, and combine well. Place in freezer for 10 minutes to chill.
Step 7: Remove from freezer and roll into 1 inch balls.
Step 8: Place in oven for 12-15 minutes.
Step 9: Remove and serve. Enjoy with your favorite Dr. brown approved dipping sauce if desired.
