Description
This salad combines the spice of blackened chicken with sweet strawberries and creamy feta. Add the balsamic reduction, and you have the perfect meal!

Ingredients
- 4 chicken breasts
- 1 t paprika
- 1/2 t oregano
- 1/4 t cayenne
- 1/2 t cumin
- 1/2 t salt
- 1/2 t black pepper
- 1/4 t onion powder
- 1/4 t garlic salt
- 1 T oil
- 4 c fresh spinach
- 1 lb. fresh strawberries (washed and quartered)
- 1/4 c fine chopped pecans
- 1 c balsamic vinegar
- 1/4 cup crumbled sheep feta, optional
Instructions
- Preheat oven to 350F.
- Season chicken with salt, pepper, onion powder, garlic salt, paprika, cumin, cayenne and oregano mixture. Rub into chicken well.
- Heat pan and olive oil. Place chicken in hot pan. Brown both sides of chicken for a few minutes.
- Place on pan and bake in preheated oven for 15 minutes.
- Wash and prep spinach and strawberries.
- In a small sauce pan, heat balsamic vinegar on med-high heat. make you to stir often. Cook for 15-20 minutes and remove from heat.
- Remove chicken from oven and slice into strips.
- Place sliced chicken on bed of spinach, and top with feta, berries and pecans.
- Drizzle with balsamic reduction.
