Blackened Chicken and Strawberry Salad

Description

This salad combines the spice of blackened chicken with sweet strawberries and creamy feta. Add the balsamic reduction, and you have the perfect meal!

Ingredients

  • 4 chicken breasts
  • 1 t paprika
  • 1/2 t oregano
  • 1/4 t cayenne
  • 1/2 t cumin
  • 1/2 t salt
  • 1/2 t black pepper
  • 1/4 t onion powder
  • 1/4 t garlic salt
  • 1 T oil
  • 4 c fresh spinach
  • 1 lb. fresh strawberries (washed and quartered)
  • 1/4 c fine chopped pecans
  • 1 c balsamic vinegar
  • 1/4 cup crumbled sheep feta, optional

Instructions

  1. Preheat oven to 350F.
  2. Season chicken with salt, pepper, onion powder, garlic salt, paprika, cumin, cayenne and oregano mixture. Rub into chicken well.
  3. Heat pan and olive oil. Place chicken in hot pan. Brown both sides of chicken for a few minutes.
  4. Place on pan and bake in preheated oven for 15 minutes.
  5. Wash and prep spinach and strawberries.
  6. In a small sauce pan, heat balsamic vinegar on med-high heat. make you to stir often. Cook for 15-20 minutes and remove from heat.
  7. Remove chicken from oven and slice into strips.
  8. Place sliced chicken on bed of spinach, and top with feta, berries and pecans.
  9. Drizzle with balsamic reduction.
