Ingredients

  • 2 ripe bananas
  • 1 c frozen blueberries
  • 3 eggs
  • 1 t cinnamon
  • 1/2 t baking powder
  • 1/2t baking soda
  • 1 t vanilla
  • 1/4 c maple syrup
  • 1/2 c cashew butter
  • 5 T butter softned
  • 1/4 c crushed walnuts
  • 1/4 c hazelnut meal + 1 T

Instructions

  1. Preheat oven to 350F.
  2. Grease a 8×8 square pan with butter.
  3. In a large bowl add maple syrup, eggs, bananas, and vanilla, and blend.
  4. Add cashew butter and cream together.
  5. In a small bowl mix cinnamon, baking powder, baking soda, and 1/4 c hazlenut meal. Blend together.
  6. Add blueberries and coat in dry mixture.
  7. Fold blueberry mixture into wet banana mixture.
  8. Scoop into pan.
  9. In a small bowl mash butter, and hazlenut meal and combine together. Add walnuts and create a crumble.
  10. Place crumble on top of blueberry banana batter and place in oven for 35-40 minutes.
  11. Remove allow to cool slightly and serve.
