Ingredients
- 2 ripe bananas
- 1 c frozen blueberries
- 3 eggs
- 1 t cinnamon
- 1/2 t baking powder
- 1/2t baking soda
- 1 t vanilla
- 1/4 c maple syrup
- 1/2 c cashew butter
- 5 T butter softned
- 1/4 c crushed walnuts
- 1/4 c hazelnut meal + 1 T
Instructions
- Preheat oven to 350F.
- Grease a 8×8 square pan with butter.
- In a large bowl add maple syrup, eggs, bananas, and vanilla, and blend.
- Add cashew butter and cream together.
- In a small bowl mix cinnamon, baking powder, baking soda, and 1/4 c hazlenut meal. Blend together.
- Add blueberries and coat in dry mixture.
- Fold blueberry mixture into wet banana mixture.
- Scoop into pan.
- In a small bowl mash butter, and hazlenut meal and combine together. Add walnuts and create a crumble.
- Place crumble on top of blueberry banana batter and place in oven for 35-40 minutes.
- Remove allow to cool slightly and serve.
