Sliced Flank Steak with Roasted Peppers

Description

The delicious balsamic marinade in this recipe makes this flank steak dish juicy and tender.

Ingredients

  • 1 flank steak, approximately 3/4 to 1 lb
  • 4 T olive oil
  • 2 T balsamic vinegar
  • 1/4 t sea salt
  • 1/4 t black pepper
  • 1 bunch of arugula leaves or greens of your choice
  • 34 roasted red peppers, julienned
  • 1/2 small red onion, julienned
  • 2 large avocado, sliced

Instructions

  1. Whisk together the olive oil, balsamic vinegar, salt, and pepper.
  2. Place the flank steak in a medium sized, rectangular dish and pour in marinade. Let sit for 2-4 hours, turning a few times to evenly distribute marinade.
  3. Preheat broiler.
  4. Broil steak for 8 minutes on each side.
  5. Remove from the oven and let sit for 5 minutes.
  6. Arrange arugula on plates and top with roasted red peppers, red onions, and avocado slices.
  7. Slice steak into thin pieces and place on top of salad.
  8. Drizzle with olive oil and serve.
