This delicious chicken and mushroom dish combines spicy horseradish mustard, tangy Dijon mustard, and fresh herbs to create a flavorful meal you won’t soon forget!

Ingredients
- 2 lbs bone In whole chicken legs or breast
- 1 T arrowroot powder
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 4 tablespoons extra virgin olive oil
- 2 cloves minced garlic
- 2 cups sliced button mushrooms
- 1 cup sliced red onion
- 2 tablespoons chopped rosemary
- 1 tablespoons horseradish mustard
- 2 tablespoons Dijon mustard
- ½ cup white wine
- 2 tablespoons fresh parsley chopped
- ¼ cup chicken stock
- 2 tablespoons butter
Instructions
- In a large skillet heat oil over medium high heat.
- Add garlic and rosemary and allow to began fragrant (1 min) add chicken seasoned with salt and pepper to taste, skin down and brown.
- Turn chicken to brown both sides.
- Remove chicken from heat and add sliced mushrooms, onions and cook for 3-5 minutes.
- Add wine and simmer for 1 minute.
- Add stock, arrowroot powder, both mustards, parsley and butter. Whisk together.
- Add chicken back to pan and cover. Make sure chicken reaches 165F and serve with sauce.
