Rosemary Dijon Chicken and Mushrooms

Description

This delicious chicken and mushroom dish combines spicy horseradish mustard, tangy Dijon mustard, and fresh herbs to create a flavorful meal you won’t soon forget!

Ingredients

  • 2 lbs bone In whole chicken legs or breast
  • 1 T arrowroot powder
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 4 tablespoons extra virgin olive oil
  • 2 cloves minced garlic
  • 2 cups sliced button mushrooms
  • 1 cup sliced red onion
  • 2 tablespoons chopped rosemary
  • 1 tablespoons horseradish mustard
  • 2 tablespoons Dijon mustard
  • ½ cup white wine
  • 2 tablespoons fresh parsley chopped
  • ¼ cup chicken stock
  • 2 tablespoons butter

Instructions

  1. In a large skillet heat oil over medium high heat.
  2. Add garlic and rosemary and allow to began fragrant (1 min) add chicken seasoned with salt and pepper to taste, skin down and brown.
  3. Turn chicken to brown both sides.
  4. Remove chicken from heat and add sliced mushrooms, onions and cook for 3-5 minutes.
  5. Add wine and simmer for 1 minute.
  6. Add stock, arrowroot powder, both mustards, parsley and butter. Whisk together.
  7. Add chicken back to pan and cover. Make sure chicken reaches 165F and serve with sauce.
