You won’t miss the grains with this paleo tortilla recipe! They are fabulous!!

Ingredients
- 2 eggs, whisked
- 1 c of full fat coconut milk
- 1 T of olive oil
- 3/4 c of tapioca flour
- 3 T of coconut flour
- 1 t sea salt
- 1/2 t paprika
Instructions
- Mix and whisk all wet ingredients.
- Mix all dry ingredients.
- Mix wet ingredients into dry until well blended.
- Heat skillet or flat top griddle med-low heat.
- Brush with butter and pour batter onto hot skillet.
- Make sure to thin out batter to make larger tortilla
- Brown tortilla on both sides and place on paper towel lined plate.

Makes 4 (8-10 in.) tortillas
