Paleo Tortillas

Description

You won’t miss the grains with this paleo tortilla recipe! They are fabulous!!


Scale

Ingredients

  • 2 eggs, whisked
  • 1 c of full fat coconut milk
  • 1 T of olive oil
  • 3/4 c of tapioca flour
  • 3 T of coconut flour
  • 1 t sea salt
  • 1/2 t paprika

Instructions

  1. Mix and whisk all wet ingredients.
  2. Mix all dry ingredients.
  3. Mix wet ingredients into dry until well blended.
  4. Heat skillet or flat top griddle med-low heat.
  5. Brush with butter and pour batter onto hot skillet.
  6. Make sure to thin out batter to make larger tortilla
  7. Brown tortilla on both sides and place on paper towel lined plate.

Notes

Makes 4 (8-10 in.) tortillas

  1. Wow, my son was really excited to be able to take a different kind of lunch wrap to school. He’s had the majority of his lunches wrapped in romaine lettuce, but has never complained. It’s nice to be able to change things up a bit and have it be tasty. Thank you for this easy to prepare tortilla recipe!
