These pumpkin muffins make for the perfect autumn breakfast or on-the-go snack!

Ingredients
- 1 c almond meal
- 1/2 c ground pecans
- 1/2 c pumpkin puree
- 3 eggs at room temperature
- 1/4 c maple syrup
- 1 T ground cinnamon
- 1 T ground nutmeg
- 1/8 t all spice
- 1 t ground ginger
- 1 t ground cloves
- 1/2 t baking soda
- 1/4 t natural sea salt
- coconut flakes or chocolate chips, optional topping
Instructions
- Preheat oven to 350F and place paper liners in muffin tin.
- Combine all ingredients in a mixer bowl and beat until smooth.
- Spoon batter into muffin tins.
- Bake for 10 minutes.
- Remove from oven.
- Serve with some pasture butter, and enjoy!
