Ingredients

  • 1 T Olive Oil
  • 1 Small Red Onion, Diced
  • 1/2 t Salt
  • 1/2 t Dried Cilantro
  • 2 Red Bell Peppers
  • 1 Zucchini, sliced and halved
  • 1 Yellow Squash, sliced and halved
  • 1/2 c White Wine or Vegetable Broth

Instructions

  1. In medium pan heat olive oil
  2. Add diced onion and red bell pepper, cook for a few minutes until fragrant and translucent
  3. Add zucchini, squash, ground cilantro and wine
  4. Simmer for 7-10 minutes
  5. Enjoy!
