Description

This mahi-mahi recipe with a pineapple-tomato relish has a little bit of kick balanced with a little bit of sweet!

Ingredients

  • 4 (6 Oz) mahi mahi fillets
  • 1/4 teaspoon Kosher salt
  • 2/3 cup crushed pineapple canned in 100% juice, well-drained
  • 1 lg heirloom tomato, diced
  • 1 teaspoon chili paste, such as sriracha (or more to taste)

Instructions

  1. Preheat oven to 375°F
  2. Line baking sheet with aluminum foil and coat with oil
  3. Place fish on prepared baking sheet and season with salt
  4. In small bowl combine pineapple, tomato, chili paste
  5. Divide mix over fish evenly
  6. Bake for 12-15 minutes or until fish flakes easily with fork
