This mahi-mahi recipe with a pineapple-tomato relish has a little bit of kick balanced with a little bit of sweet!

Ingredients
- 4 (6 Oz) mahi mahi fillets
- 1/4 teaspoon Kosher salt
- 2/3 cup crushed pineapple canned in 100% juice, well-drained
- 1 lg heirloom tomato, diced
- 1 teaspoon chili paste, such as sriracha (or more to taste)
Instructions
- Preheat oven to 375°F
- Line baking sheet with aluminum foil and coat with oil
- Place fish on prepared baking sheet and season with salt
- In small bowl combine pineapple, tomato, chili paste
- Divide mix over fish evenly
- Bake for 12-15 minutes or until fish flakes easily with fork
